           FOODS AND NUTRITION
The scope of Home Economics is great, and has been defined by Ellen Richards as "education for living." Many people are amazed at the area covered by the curriculum which includes Foods and Nutrition, Clothing and Textiles, Housing and Home Management, Family Living, and Consumer Buying.
Throughout the course in foods the selection of essential nutrients and the importance of conserving them is stressed. The old saying "Power to do is gained by doing," is demonstrated in the foods depa1tment as the girls plan, prepare, serve, calculate food values and the cost of the meals.
Normal nutrition is taught in grades lX, X, and Xl, using the Canadian nutrition books "Nutrition for To-Day" by Dr. Elizabeth Robertsen and "Nutrition" by Hiltz. In grade Xll the girls study diet in disease from the well known book "Nutrition and Diet Therapy" by Proudfit and Robinson.
The other topics covered by the course include "Homemaking Can Be Easy" in grades lX and X, "Consumer Buying" in Xl, "Housing and Home Management" in Xl and Xll, and in all grades an attempt is made to teach the girls that confidence in social situations comes from "Knowing how."
The test concerning the worth of a Home Economics education lies not only in skills, but also in the things that make everyday Iife as a homemaker and career woman both a challenge and a joy.
